I reckon you should start with music she already likes and try to find a DT song in a similar vein.

My Mrs likes Muse so I went for symphonic tracks of Systematic Chaos.

Also you could try the covers, (Saucer full of Floyd, B side of A Change of Seasons, Master of Puppets).

I think you should add This is the Life if you're adding The Spirit Carries On, since the "heavy" parts are very similar, being the solos and ending.

Well, my girlfriend likes DT already, although she's not a fan as such. She's into heavy and punky stuff but can really appreciate good music

By the way, my mother is also into DT. She heard SFAM once while I was listening and loved it. Then she heard ACOS and was completely into them. When Dream Theater first went to Venezuela, I took her to see the show. The last thing she told me about ADTOE was: "My old DT is back!" :D
